Ingredients

  • 1 1/4 Cups Rotel Tomatoes & Chilies (Reserving Juice)
  • 1 Cup Fire Roasted Diced Tomatoes (Reserving Juice)
  • 1/2 Cup Fresh Cilantro Leaves
  • 1/2 Cup Onion (Diced)
  • 2 Cloves Garlic (Minced)
  • 1 Large Jalapenos (Seeded & Minced)
  • 1/4 Teaspoon Ground Cumin
  • 1/4 Teaspoon Salt & Freshly Ground Black Pepper
  • 1/8 Teaspoon Sugar
  • 1/2 Large Lime (Zested & Juiced)

Directions

  1. Combine rotel & fire roasted diced tomatoes, cilantro, onions, garlic, cumin, sugar, minced jalapenos, lime juice and salt in the bowl of a food processor and pulse until a semi chunky consistency is acheived.
  2. Check seasoning and adjust as needed. Allow the salsa to chill in the refrigerator for at least 1 hour (or more) to allow the flavors to meld. Pair with tortilla chips, or your favorite Mexican treats.
