My quick & simple slow cooker recipe is filled with spicy Mexican chorizo sausage, onions, tomatoes, garlic, corn and plenty of piquant seasoning. Your slow cooker will have a steaming pot of chilli ready for you to serve for a quick dinner!

  • 1 Tablespoon Extra-Virgin Olive Oil
  • 1 Small Jalapeno (Seeded & Minced)
  • 1 Medium Onion (Diced)
  • 1 Clove Garlic (Minced)
  • 1 Pound Homemade Chorizo (Recipe Associated)
  • 1 Cup Tomato Sauce
  • 10 Ounces Diced Tomatoes With Green Chilies
  • 2 Cups Frozen Corn
  • 1 Teaspoon Robust Chili Powder (Recipe Associated)
  • 1 Teaspoon Cumin
  • 1/2 Teaspoon Paprika
  • 1/4 Teaspoon Cayenne Pepper
  • 1 Teaspoon Salt & Freshly Ground Black Pepper


  1. In a cast-iron skillet, heat the olive oil over medium heat, stir in the onions, jalapeno and minced garlic until the onions are translucent. Add the chorizo and saute for about 10 minutes or until the chorizo is browned. Drain any excess grease.
  2. In the crock of a slow cooker, combine the chorizo mixture, tomato sauce, diced tomatoes, corn, and spices. Cook on low for 8 hours, or on high for 4 hours.
  3. Serve with cornbread, and your favourite garnish if desired.
