Ingredients

  • 1 1/2 Cups Water
  • 21/32 Cups White Navy Beans (Rinsed)
  • 1/8 Cup White Wine Vinegar
  • 1/8 Cup Extra Virgin Olive Oil
  • 21/32 Tablespoon Dijon Mustard
  • 2 Cloves Garlic (Crushed)
  • 1/4 Medium Bunch Of Green Onions (Thinly Sliced)
  • 1/3 Cup Greek Olives (Pitted)
  • 1/3 Tablespoon Salt & Freshly Ground Black Pepper
  • 1 1/2 Cups Butter Lettuce
  • 8 Tomato Wedges

Directions

  1. In a slow cooker on low heat, add water and beans and cook, covered for 6-8 hours or until beans are tender.
  2. Strain the beans and transfer the beans to a large mixing bowl. Set aside.
  3. In a small mixing bowl, combine vinegar, oil, mustard, and garlic. Pour vinaigrette over the beans and mix in green onions, olives, salt, and black pepper until well combined.
  4. Evenly divide the lettuce into 4 separate bowls and top with bean mixture and 2 tomato wedges per bowl.
