  • 1 1/2 Pounds Beef Stew Meat
  • 1 Tablespoon Extra-Virgin Olive Oil
  • 1 Teaspoon Salt & Freshly Ground Black Pepper
  • 1 Teaspoon Italian Seasoning
  • 2 Tablespoons Worcestershire Sauce
  • 3 Cloves Garlic (Minced)
  • 1 Large Onion (Diced)
  • 1 Pound Carrots (Chopped)
  • 1 Pound Potatoes (Quartered)
  • 2 1/2 Cups Beef Stock
  • 15 Ounces Tomato Sauce
  • 2 Tablespoons Cornstarch
  • 2 Tablespoons Water

Directions

  1. In the cooking vessel of an Instant Pot, heat the olive oil on saute mode and combine the stew meat, salt, pepper, and Italian seasoning and brown on all sides.
  2. Stir in the beef stock, Worcestershire sauce, minced garlic, diced onion, chopped carrots, potatoes, and tomato sauce.
  3. Cover and cook on high pressure for 35 minutes, allow the pressure to release naturally for 10 minutes and then perform a quick release.
  4. Meanwhile, combine the water and cornstarch and stir into the stew until the sauce has thickened.
