It has irresistible layers of crunchy tortilla chips, seasoned chicken, sour cream, black beans, tomatoes & onions with a gooey cheese topping. The added green chillies provide a satisfying heat similar to tamales.

Ingredients

  • 3 Large Boneless Chicken Thighs (Cooked & Diced)
  • 3/4 Cups Classic Cosina Salsa (Recipe Associated)
  • 2 Medium Green Chillies (Seeded & Diced)
  • 1 Cup Black Beans (Rinsed & Drained)
  • 1/2 Large Tomato (Diced)
  • 1/2 Medium Bunch Of Green Onions (Sliced)
  • 1/2 Cup Cream Cheese
  • 1 Cups Tortilla Chips (Crushed)
  • 1/2 Cup Sour Cream
  • 1 Cups Shredded Cheddar Cheese

Directions

  1. Preheat oven to 350 degrees. Coat a casserole dish with cooking spray and set aside.
  2. In a large skillet over medium-high heat, add chicken, salsa, chillies, beans, tomatoes and green onions. Saute mixture until chicken is brown on all sides and veggies are tender-crisp about 10-12 minutes. Add cream cheese and salsa, and stir until melted & incorporated another 5 minutes.
  3. In the prepared casserole dish, layer crushed chips, chicken mixture & sour cream and top with shredded cheese. Bake until hot and cheese is bubbling, about 30 minutes.
